Submerge 2.5kg pork ribs in water with 7 bay leaves and 100ml soju for pre-processing.
Add 3L water, 300ml brewed soy sauce, 200ml mirin, 1 tablespoon ginger, 1 Asian pear, and 4 tablespoons brown sugar to the pre-cooked ribs and simmer on medium heat for 30 minutes.
Prepare 3 stalks green onion, 1 carrot, half a radish, 5 shiitake mushrooms, 3 cheongyang chili peppers, and 15 garlic cloves by trimming and cleaning.
Skim off the oil that rises to the surface from the ribs.
Add radish, carrot, whole garlic cloves, and 2 tablespoons red pepper powder and reduce on high heat for 10 minutes.
Add green onions, cheongyang chili peppers, and shiitake mushrooms and reduce on low heat for 10 more minutes.
Add 2 tablespoons sesame oil to finish.
