Dice the bell pepper, cut the carrot into half-moons, dice the onion, and slice the button mushrooms thickly.
In a bowl, combine gochujang 1T, dark soy sauce 1T, sugar 0.5T, minced garlic 0.5T, ketchup 4T, oligosaccharide syrup 1T, curry powder 1T, and mirin 1T to make the sauce.
Heat olive oil 3T in a pan, then add the carrot first and stir-fry until translucent.
Add the onion and a pinch of salt.
Add the bell pepper and button mushrooms and stir-fry.
Add the sausages and stir-fry until coated with oil, then reduce to low heat and add the sauce and stir-fry.
Finish with sesame oil 0.5T.
