Prepare and cut all vegetables.
In a bowl, season the mushrooms with 2T brewed soy sauce, 0.5T sugar, and black pepper.
Heat 2T cooking oil in a pan, add onion, carrot, and a pinch of salt, stir-fry until the onion is translucent.
Set aside the onion and carrot, then quickly stir-fry the seasoned mushrooms in the same pan.
Place glass noodles and 1.5L water in a pot together, boil for 4 minutes from boiling point, then rinse in cold water.
In a pot, combine 1T cooking oil, 4T brewed soy sauce, 2T mirin, and 1T brown sugar, bring to a boil, add the cooked noodles and stir-fry for 2 minutes.
Turn off the heat, add the stir-fried vegetables and mushrooms (squeeze out excess liquid), then drizzle with 1T sesame oil to finish.
