In a bowl, combine the pork with 2T sugar and 2T vinegar and toss together.
Coarsely grate half an onion, then mix with 5T dark soy sauce, 1T anchovy fish sauce, 1T doenjang, 2T mirin, 1T minced garlic, 1T black pepper, and 1T sesame oil to make the marinade.
Add the marinade to the pork, mix well, cover with plastic wrap, and marinate in the refrigerator for 30 minutes.
Heat 2T cooking oil in a pan, add the marinated pork, and stir-fry until most of the moisture evaporates.
Add green onion and stir-fry on high heat for 2 minutes.
