Mix the pork with gochugaru 3T, gochujang 1T, sugar 1T, mirin 2T, dark soy sauce 2T, minced garlic 1T, and black pepper 0.5T. Toss and marinate for 10 minutes.
Prepare the kimchi, onion, green onion, and Cheongyang chili peppers.
Heat cooking oil 2T and stir-fry the marinated pork over medium heat.
When enough pork fat has rendered, add the kimchi and stir-fry together until the kimchi becomes translucent.
Add water 400ml and simmer until about half the liquid remains.
Add onion, green onion, Cheongyang chili pepper, and 2–3 pinches of fine salt to adjust seasoning.
