Cut off the base of the spring cabbage and wash each leaf individually.
Bring water to a boil, add 1T sea salt, and blanch the spring cabbage for under 2 minutes.
Immediately rinse the blanched spring cabbage in cold water and squeeze out lightly.
Place the spring cabbage in a bowl and mix with 1T perilla oil first.
Add doenjang 1T, oligosaccharide syrup 1T, anchovy fish sauce 1/2T, tuna sauce 1T, minced garlic 1/2T, sesame seeds, chopped green onion, red chili, and a pinch of fine salt and mix well.
