Place the mung bean sprouts in a bowl and rinse thoroughly in cold water.
Fill a pot halfway with water, bring to a boil, add the sprouts, and cook uncovered, turning occasionally.
Exactly 3 minutes after the water starts boiling, turn off the heat, drain through a strainer, and rinse in cold water.
Squeeze out the water, place in a bowl, and season with soup soy sauce, salt, sugar, and minced garlic, tossing to combine.
Finish by adding sesame oil and sesame salt and mix well.
