Cut the garlic scapes into bite-sized pieces.
Add salt 1 tablespoon to water, bring to a rolling boil, add garlic scapes, and blanch for 30 seconds.
Quickly rinse the blanched garlic scapes in cold water and drain in a strainer.
Add cooking oil 2 tablespoons to a pan and stir-fry the garlic scapes for 1 minute.
Add water 100ml, dark soy sauce 5 tablespoons, mirin 2 tablespoons, plum extract 1 tablespoon, corn syrup 2 tablespoons, and minced garlic 1 tablespoon.
Once it boils, cover with the lid, reduce to low heat, and simmer for 10 minutes.
