Rinse the aged kimchi several times.
Dissolve 4T of sugar in 800ml of water in a bowl, then soak the aged kimchi for 30 minutes.
Remove the kimchi, rinse once more, and squeeze out excess water.
Prepare the onion and soup stock anchovies.
In a pot, layer onion, anchovies, then aged kimchi, add enough water to submerge, then add doenjang 1T, minced garlic 1T, mirin 2T, sugar 1T, and perilla oil 2T, and bring to a boil.
Once boiling, cover with a lid and cook over medium-low heat for 15 minutes, then flip the kimchi and simmer gently for another 15 minutes.
