Remove the membrane from the back ribs and clean them.
Dissolve 3T sugar in water, add the ribs, and soak for 10 minutes to draw out the blood.
After rinsing, place the ribs in a pot with enough water to cover, 5 bay leaves, 3T sugar, 1T whole peppercorns, and 1T doenjang, and boil for 30 minutes from the point it starts to boil.
Wash the wrinkled chili peppers. Make the sauce with 200ml water, 50ml soy sauce, 5T corn syrup, 3T mirin, 1T minced garlic, and 0.5T black pepper.
Rinse the boiled ribs in cold water to remove impurities.
Heat 1T cooking oil in a pan, add the ribs and sauce, and braise while turning.
When nearly braised, add the wrinkled chili peppers and stir-fry, then turn off the heat and add 1T sesame oil.
