Smash the whole lotus root with the back of a knife to crush it into small pieces.
In a bowl, add ground pork (300g), fine salt (2 pinches), and sugar (1/2 tbsp).
Finely chop the cheongyang chili, onion, and carrot with a food chopper.
Combine the crushed lotus root, chopped vegetables, ground pork, minced garlic (1 tbsp), frying flour mix (2 tbsp), soy sauce (2 tbsp), sesame oil (1 tbsp), and black pepper (1 tbsp); knead together thoroughly.
Dust a plate lightly with frying flour, shape the patties and place on a cutting board, then sift frying flour over them so they don't clump.
Prepare a beaten egg wash, coat each patty in egg, then pan-fry in a generously oiled, preheated pan.
