Gently scrape the burdock root skin off using the back of a knife
Slice the burdock root diagonally or julienne, then immediately submerge in water
Heat 3T cooking oil in a pan, stir-fry the burdock root for 3 minutes, then add 800ml water, 2T plum extract, 1T brown sugar, and 80ml dark soy sauce; simmer over medium heat for 30 minutes
When nearly reduced, add 2T rice malt syrup and 1T sesame oil, boil off the remaining liquid, then sprinkle with sesame seeds and serve
