Once the water boils, add eggs and cook for 7 minutes for soft-boiled, or 10 minutes for hard-boiled.
Combine fine red pepper powder (3 tbsp), dark soy sauce (2 tbsp), apple cider vinegar (2 tbsp), sugar (2 tbsp), gochujang (6 tbsp), and plum extract syrup (2 tbsp), then add a generous splash of cider to make the sauce.
Separate the jjolmyeon noodles and boil them in boiling water, stirring occasionally throughout.
Once cooked, immediately rinse under cold water.
Julienne the cucumber, roughly chop the lettuce, and blanch the bean sprouts.
Place the jjolmyeon and vegetables in a bowl, add the sauce and sesame oil, and toss to combine.
