Cut off both ends of the cucumber by 2cm and julienne into thin strips.
Add fine salt 1 tablespoon and sugar 1 tablespoon to the julienned cucumber, mix gently, and brine for 5 minutes.
Julienne the onion and slice the red chili pepper diagonally.
Add water 500ml, onion, red chili pepper, soup soy sauce 0.5 tablespoon, vinegar 2 tablespoons, sesame seeds, and ice to the brined cucumber.
Taste and adjust with more salt or vinegar if needed.
