Add 1T sea salt to 600ml water and gently rub the oysters to wash them.
Rinse, drain, toss with 1T sesame oil, cover with plastic wrap, and refrigerate for 20 minutes.
Julienne the cheongyang peppers, radish, and pear; add 0.5T salt to the radish and pear and cure for 10 minutes.
Make a seasoning sauce with 4T red pepper powder, 2T plum extract, 2T anchovy fish sauce, 1T minced garlic, and 1T sesame seeds.
Add the cheongyang peppers, radish, pear, and seasoning sauce and toss together.
Add the oysters and toss once more.
