Remove the stems from the peppers, split them in half lengthwise, and rinse out the seeds under running water.
Dissolve 2T of sea salt in 1L of water in a bowl, add the peppers, and let them pickle for 30 minutes.
Finely chop the pear, onion, carrot, and chives.
In a bowl, combine the chopped pear, onion, carrot, chives, and 5T red pepper powder and mix well to make the stuffing. Add 2T anchovy fish sauce, 2T plum extract, and 1T oligosaccharide syrup and lightly mix.
Drain the pickled peppers in a strainer without rinsing and stuff them with the filling. Done!
