Season the ground beef and pork with 2 pinches of fine sea salt and 1/2T of sugar.
Squeeze tofu tightly in a cheesecloth to remove all moisture. Finely mince onion, carrot, green onion, and shiitake mushroom.
In a large bowl, combine seasoned meat, mashed tofu, minced vegetables, 2T soy sauce, 1T minced garlic, 1T sesame oil, 1T black pepper, and 4T Korean frying mix. Knead the mixture for 10 minutes.
Sift a layer of frying mix onto a wide plate. Shape the meat mixture into round patties and place them on top, then sift another thin layer of frying mix over them.
In a bowl, whisk together 4 eggs and 1T minced garlic to make the egg batter.
Heat cooking oil in a pan over the lowest heat setting. Lightly dip each patty in egg batter and cook slowly, flipping multiple times to ensure even cooking without burning.
