Wash the chicken and pat it dry with paper towels.
Add 0.5T salt, 1T black pepper, 1T sugar, and half a cup of soju to the chicken for the first marinade.
Combine 2T gochujang, 4T chili powder, 4T dark soy sauce, 3T mirim, 2T corn syrup, 1T sugar, 1T minced garlic, 1T sesame oil, 1T curry powder, and 0.5T black bean sauce to make the marinade.
Add the marinade to the pre-seasoned chicken, mix well, and marinate at room temperature for 30 minutes. Prepare the vegetables meanwhile.
Heat 5T vegetable oil in a pan, add the chicken and sweet potato and stir-fry, then add 100ml water and continue cooking.
Once the chicken is half cooked, reduce to low heat and add the onion, cabbage, Korean green chili, and green onion, and cook until done.
Add perilla leaves at the end for aroma and serve.
