Trim and prepare the potatoes, onion, green onion, and cheongyang chili.
In a bowl, combine 2T gochujang, 2T dark soy sauce, 2T red pepper powder, 2T mirin, 1T minced garlic, 0.5T black pepper, and 2T water to make the seasoning sauce in advance.
Heat 1T cooking oil in a pan and stir-fry the pork shoulder once the pan is hot.
Add the potatoes and onion, and stir-fry for 5 minutes until the outer surface of the potatoes becomes translucent.
Add the seasoning sauce and stir-fry once more.
Once fully stir-fried, add 400ml of water and simmer for 3 minutes after it starts boiling.
Add the green onion and cheongyang chili, and simmer for 2 more minutes.
