Trim the kimchi, pork shoulder, onion, green onion, and cheongyang chili pepper.
In a bowl, combine 6T dark soy sauce, 4T red pepper powder, 2T mirin, and 2T minced garlic to make the seasoning sauce.
In a pan, add 2T cooking oil, the pork shoulder, 2T sugar, and 2 pinches of fine salt, then stir-fry thoroughly until browned.
Add the kimchi and stir-fry further, then add the seasoning sauce, onion, green onion, and cheongyang chili pepper and continue stir-frying.
Turn off the heat, add 1T sesame oil and sesame seeds to finish.
