Mix 2T salt, 2T vinegar, and 2T sugar into 1.2L of water, soak the sweet potato stems for 15 minutes, then peel off the skin
Bring 1.5L of water to a boil in a pot, add 1T sea salt, then add the sweet potato stems and boil for 5 minutes
Rinse the boiled stems in cold water to remove heat, squeeze out excess moisture firmly, knead, and cut into bite-sized pieces
In a bowl, combine the sweet potato stems with 3T water, 2T soup soy sauce, 1T mirin, 1T perilla oil, and 1T minced garlic, and massage together
Finely chop the cheongyang chili pepper and red chili pepper
Heat 2T olive oil in a pan, add the seasoned stems and a pinch of salt, stir-fry, and when a little moisture remains, add the chilies to finish
