Remove the base of the aralia shoots, trim the outer leaves, score a cross at the bottom, and gently scrape off small thorns
Rinse the trimmed aralia shoots 2-3 times in cold water to remove any impurities
Add 1T sea salt to boiling water, blanch the base portion first for 20 seconds, then fully submerge and blanch for 40 seconds more (1 minute total)
Quickly rinse the blanched aralia shoots in cold water, squeeze out moisture, and place on a sieve
Mix gochujang, gochugaru, anchovy fish sauce, rice malt syrup, vinegar, minced garlic, and plum extract to make the seasoning sauce
Toss the aralia shoots evenly with the seasoning. It is delicious right away and even better after a few days of marinating
