Slice the onions, slice the garlic thinly, dice the sweet potatoes and carrots, and slice the button mushrooms.
Melt 1 knob of butter in a pot, add the onions and garlic, and sauté on low heat for over 20 minutes until caramelized.
Add the sweet potatoes, carrots, button mushrooms, and pork, and stir-fry until the meat is about 1/3 cooked.
Add 750ml water and simmer on medium heat until all ingredients are fully cooked.
Reduce to low heat, add the curry roux, and stir gently to dissolve, then simmer for 3 minutes.
