In a bowl with 600ml water and 1T sea salt, gently wash the oysters by rubbing them softly.
Rinse the oysters, drain, then toss with 1T sesame oil; cover with plastic wrap and marinate in the refrigerator for 20 minutes.
Julienne the cheongyang chili peppers, radish, and pear; place radish and pear in a bowl, add 0.5T salt, and let sit for 10 minutes.
Make the sauce: combine 4T red pepper flakes, 2T maesil extract, 2T fish sauce, 1T minced garlic, and 1T sesame seeds.
In a bowl, mix the cheongyang chili peppers, radish, pear, and sauce together.
Add the marinated oysters and toss gently for a second round of seasoning.
