Mince the garlic and slice the onions into 1cm-thick slices.
Pat the pork dry with paper towels to remove any blood.
Add vegetable oil to a pan, heat it up, add minced garlic and stir-fry until golden brown, then add the pork and stir-fry together.
Once the meat is slightly cooked, reduce to medium heat and add 2 tbsp mirin, 1 tbsp green plum syrup, 1 tbsp black pepper, 1 tbsp sugar, and 2 tbsp soy sauce, then add the onions and continue stir-frying.
Add 4 tbsp coarse chili flakes, 5 tbsp gochujang, and 2 tbsp starch syrup and stir-fry on medium heat for 3 minutes.
