Julienne the potatoes.
Rinse the julienned potatoes 2–3 times in water to remove the starch, then drain in a colander and shake off the moisture.
Add 2T pancake mix, 3 pinches of fine salt, and pepper, then mix to form a batter.
Heat a generous amount of cooking oil, then spread the batter wide and cook over medium heat for 5 minutes.
Flip and cook for 2 more minutes, then flip again and transfer to a plate.
