In a bowl, mix the pork with 2T sugar and 2T vinegar for an initial coating
Coarsely blend half an onion, then mix with 5T dark soy sauce, 1T anchovy fish sauce, 1T doenjang, 2T mirin, 1T minced garlic, 1T black pepper, and 1T sesame oil to make the marinade
Add the marinade to the pork, mix well, cover with plastic wrap, and marinate in the refrigerator for 30 minutes
Add 2T cooking oil to a pan, add the marinated pork, and stir-fry until almost no moisture remains
Add green onion and stir-fry over high heat for 2 more minutes
