Soak 400g of glass noodles in cold water for 1 hour, then drain in a colander
Julienne 2 onions and 1/2 carrot
In a pan, add 600ml of water, 130ml of dark soy sauce, and 8 tbsp of brown sugar and heat to dissolve
Add 5 tbsp of cooking oil to prevent the noodles from sticking
Before the water boils, add all the soaked glass noodles and bring to a boil over high heat
When the broth begins to bubble, reduce to medium heat and stir-fry for 1 minute
Add onion and carrot and stir-fry over medium heat for 3-4 minutes until the sauce liquid is almost gone
When the liquid has reduced, turn off the heat and toss with spinach, 4 tbsp sesame oil, and sesame seeds to finish
