Peel the potatoes and cut them into half-moon shapes.
Soak in water for 10 minutes to remove the starch.
Slice the green onion and set aside.
Add 1 tbsp cooking oil to a pan and stir-fry the dried potatoes (this step firms them up).
Add 500ml water, 6 tbsp dark soy sauce, 2 tbsp sugar, 2 tbsp corn syrup, and a pinch of fine salt, then braise.
If the liquid evaporates but the potatoes are not yet cooked through, add a little more water and continue braising.
Add the green onion and sesame seeds at the end and it's done.
