Wear rubber gloves to remove dirt from deodeok; rinse 4–5 times changing the water, and remove the crown (top end).
Place deodeok on a cutting board and peel with a vegetable peeler.
Roll a rolling pin over the deodeok to flatten it.
Mix 2 tbsp sesame oil and 2 tbsp soy sauce to make yuijang (oil-soy sauce) and brush it on both sides of the deodeok.
Make the seasoning sauce by combining 2 tbsp gochujang, 2 tbsp red pepper flakes, 1 tbsp soy sauce, 1 tbsp plum extract, 1 tbsp oligosaccharide syrup, and 1 tbsp minced garlic.
Pan-toast the oil-soy-coated deodeok over low heat for 1–2 minutes.
Turn off the heat, add the seasoning sauce, toss to coat evenly, and garnish with a handful of green onions for a beautiful presentation and great taste.
