Cut each eggplant into thirds, then halve each piece. Finely chop the green onion.
In a bowl, combine 3T dark soy sauce, 1T minced garlic, 0.5T sugar, 1T mirin, 100ml water, and the chopped green onion to make the sauce.
Heat 3T cooking oil in a pan, place the eggplant cut-side down over low heat, cook until partially done, then flip and cook for another 30 seconds.
Pour in the sauce, bring to a boil, then cover with a lid and braise for 5 minutes.
