Thaw the LA galbi and wash it several times in water.
Put the ribs in a bowl, pour in 1L of soda, and soak for 1 hour to remove blood.
Blend 1 Asian pear, 1 onion, and 200ml of still water in a blender.
To the blended mixture, add soy sauce 200ml, mirin 100ml, sugar 3T, sesame oil 3T, minced garlic 3T, and finely sliced green onion to prepare the marinade.
Rinse the ribs under cold running water, then marinate in the sauce and refrigerate for at least 6 hours.
Prepare the carrot, jujubes, and shelled chestnuts.
In a pot, add the marinated ribs and 200ml water, bring to a boil, skim off the foam, add carrot, chestnuts, and jujubes, and braise until reduced.
