Soak the glass noodles in cold water 12-24 hours in advance and keep refrigerated
Prepare a pan with a lid, cut the pork into bite-sized pieces and spread evenly on the bottom of the pan
Place the soaked glass noodles in a bowl, add cooking oil, dark soy sauce, brown sugar, and sesame oil, and toss to coat
Spread the seasoned glass noodles evenly over the pork
Mix the prepared vegetables and place them on top of the noodles
Cover with a lid and cook over medium-low heat for 5 minutes without disturbing
After 5 minutes, remove the lid and stir-fry with chopsticks until done
