Soak the glass noodles in lukewarm water for 30 minutes.
Marinate the pork with 2T dark soy sauce, 2T mirin, and 1T sugar.
In a bowl, mix 8T dark soy sauce, 2T brown sugar, 2T mirin, 0.5T black pepper, and 100ml water to make the seasoning sauce.
Prepare the carrot, onion, and spinach.
Boil water in a pot and cook the glass noodles for 5 minutes; add spinach 1 minute before they are done.
Rinse the glass noodles and spinach in cold water.
Heat 2T cooking oil in a pan, stir-fry the pork, then add onion, carrot, and a pinch of salt; stir-fry over medium heat.
Add the soaked glass noodles and the seasoning sauce; stir-fry for 1 minute 30 seconds, then add the spinach.
Once done, immediately transfer to another plate, toss with 1.5T sesame oil, then spread out to cool.
