Thaw frozen blue crabs under cold running water just enough so the pieces separate.
Remove the unnecessary leg tips from the thawed crab.
Place the crab in a bowl, add half a cup of soju, mix well with a spatula, and store in the freezer.
Boil water 1.5L, dark soy sauce 300ml, Korean soup soy sauce 100ml, and half a cup of sugar in a pot.
Once the soy sauce brine boils, add bonito flakes, ginger 1 piece, whole garlic 10 cloves, apple 1 piece, onion 1 piece, green onion 2 stalks, and chili seeds 1 tbsp, and boil for 20 minutes.
Strain the ingredients with a strainer to get only the broth, add half a cup of plum extract and half a cup of soju, and let it cool completely.
Pour the cooled soy sauce brine over the crab and refrigerate to marinate for 1-2 days.
