Cut the tofu into bite-sized pieces and spread on a kitchen towel.
Sprinkle 2 pinches of salt evenly over the tofu and let it sit for 10 minutes to draw out moisture.
In a bowl, combine dark soy sauce 2T, mirin 2T, corn syrup 2T, water 2T, and minced garlic 1T to make the sauce.
Mix starch powder 2T and glutinous rice flour 2T, then coat the tofu evenly.
Heat cooking oil 1T and perilla oil 1T in a pan over low heat and pan-fry the tofu, flipping occasionally.
Once nicely browned, pour the sauce over the tofu and reduce slightly.
