Fill a bowl with cold water and wash the spinach 2–3 times until clean.
Add 1T sea salt to 1L of boiling water, then blanch the spinach for 30 seconds.
Immediately rinse the spinach in cold water to stop the cooking, squeeze out all moisture by hand, and transfer to a strainer.
In a bowl, combine the spinach, 3T sesame salt, 1T sesame oil, 1T Korean soup soy sauce, 1T mirin, 0.25T minced garlic, and 0.5T seasoned salt, then toss gently.
