Remove the stems from the shiitake mushrooms, quickly rinse under running water, then immediately pat dry with paper towels
Slice the onion, slice the garlic cloves thinly, and cut the chives into 5cm pieces
Slice the shiitake mushrooms thickly
Heat olive oil in a pan and stir-fry the sliced garlic and onion
Once the garlic turns golden, add the shiitake mushrooms, mirin, and 5 pinches of salt and stir-fry on low heat
Taste and adjust seasoning, then turn to high heat and stir-fry for 30 seconds
Once the shiitake mushrooms are golden, turn off the heat, add perilla oil and chives, mix lightly, and plate immediately
