Microwave the kabocha squash for 5 minutes.
Cut the top of the kabocha squash as a lid, scoop out the seeds and flesh to create a bowl shape.
Heat a pan and stir-fry the smoked duck.
Once the duck fat renders, add onion, whole garlic cloves, and bell pepper. Add dark soy sauce, cooking wine, corn syrup, and sugar and stir-fry together.
Fill the kabocha squash with the cooked smoked duck mixture and close the lid.
Steam in a steamer for 15-20 minutes, then remove and slice into pieces.
