Shred the potatoes into thin strips
Dissolve 1T of fine salt in water, add the shredded potatoes and brine for 10 minutes
Julienne the carrot, deseed and slice the cheongyang chili lengthwise, and cut the ham into long strips the same size as the potato
Rinse the brined potatoes in water and drain in a strainer
Heat 2T of cooking oil in a pan, add the potatoes and 1T of fish sauce, and stir-fry for 5 minutes
Add the ham, carrot, cheongyang chili, and 0.5T of seasoned salt and stir-fry
Add pepper to taste
