Pat the pork dry with paper towels, slice into bite-sized pieces, add dark soy sauce 2T and sugar 1T, and marinate for 5 minutes.
Prepare the onion, shishito peppers, and green onion.
Mix gochujang 2T, Korean red chili powder 4T, mirin 2T, starch syrup 2T, black pepper 1T, maesil extract 1T, minced garlic 1T, and dark soy sauce 1T in a bowl to make the sauce.
Heat cooking oil 2T in a pan and stir-fry the marinated pork until nicely browned.
Add all the prepared vegetables and the sauce, and stir-fry together.
Once fully cooked and fragrant, turn off the heat and stir in sesame oil 1T.
