Gently scrub the potatoes with rubber gloves or a cleaning brush to remove dirt and impurities
Place the potatoes in a pot, cover with enough water, add 2T salt and 50ml vinegar. As soon as it starts boiling, rinse immediately with cold water
Add enough water (1L) to cover the potatoes, along with 200ml soy sauce, 5T yellow corn syrup, 50ml mirin, 1T brown sugar, and 1T cooking oil, then simmer over medium heat
When nearly reduced, add 1T more brown sugar, stir-fry briefly, turn off the heat, and drizzle with 1T sesame oil
