Peel the sweet potatoes.
Soak in cold water for 5 minutes to remove starch, then cut into bite-sized pieces.
Cover with plastic wrap and microwave for 3 minutes.
Heat 3T cooking oil in a pan, add sweet potatoes, and stir-fry for 3 minutes as if frying, then transfer to a plate.
Add 2T cooking oil, 6T sugar, and 3T water on low heat and let the sugar dissolve naturally.
Add the sweet potatoes back and reduce, stirring repeatedly.
