Cut the onions into 1cm-thick rings, cut the green onion into large chunks, and slice the pear (or apple) into wide flat pieces after removing the skin and seeds.
Mix 2 tbsp doenjang, 1 tbsp minced garlic, and 2 tbsp mirin together, then spread evenly all over the surface of the pork belly.
Line the bottom of a lidded pot completely with onion rings, place green onion and pear on top, set the doenjang-coated pork on top, then add bay leaves, a pinch of whole peppercorns, and drizzle in 100ml soju.
Cover with the lid and cook on low heat for 1 hour.
Turn off the heat and let it steam for 5 minutes, then remove, let cool briefly, and slice into serving-sized pieces.
