Mix baking soda and sea salt in a 2:1 ratio with water, wash the Korean melon thoroughly, and rinse multiple times.
When drying, use a soft cotton cloth or paper towel to gently pat dry to avoid scratches that may cause bitterness.
Cut off both ends of the melon, split in half, and scoop out the seeds with a spoon.
Place the melon in a container with the skin side facing down, sprinkle 1/2 cup of sea salt, then pour in 1/2 cup of vinegar, 3 cups of starch syrup, and 1 cup of soju.
Close the lid and store at room temperature for 1-2 days, then refrigerate.
