Add 1 tbsp of salt to boiling water, add the chicken breast, cover with a lid, and boil on medium heat for 10 minutes.
Rinse the boiled chicken breast in cold water to cool it down, then slice against the grain and cut into cubes.
Loosen 100g of brown rice into individual grains in advance, and prepare the carrot, onion, green onion, and king oyster mushroom into bite-sized pieces.
Heat 2 tbsp of olive oil in a pan, add a pinch of salt to the chicken breast and stir-fry lightly until golden, then add all the prepared vegetables and stir-fry quickly for 30 seconds.
In a separate pan, heat 1 tbsp of olive oil and add 100g of brown rice to stir-fry.
Once the rice is partially fried, add the cooked chicken breast and vegetables, season with 1 tbsp of soy sauce, a pinch of salt, and black pepper, then stir-fry quickly and serve.
