Cut off the seed pod ends and cut the garlic scapes into bite-sized pieces, then wash clean.
Blanch the garlic scapes in boiling water with 1T salt for 20 seconds.
Quickly rinse the blanched garlic scapes in cold water.
In a pan, combine 2T cooking oil, 4T gochujang, 4T red pepper flakes, 2T dark soy sauce, 2T plum extract, 6T corn syrup, and 6T water, bring to a boil, then turn off the heat.
Once the sauce has cooled sufficiently, add the garlic scapes and toss, then add 1T sesame oil and 2T sesame seeds and toss once more.
