Trim the top of the garlic scapes and cut into bite-sized pieces
Slice the ham into bite-sized pieces
Bring water to a boil in a pot, add 1T salt, then blanch the garlic scapes for 20 seconds
Heat 2T cooking oil in a pan, then stir-fry the garlic scapes for 1 minute
Add 0.5T minced garlic, 2T dark soy sauce, 1T mirin, and ham, then stir-fry together
Once fully cooked, turn off the heat and mix in 2T oligosaccharide syrup and 0.5T sesame oil using residual heat
