Cut the beef into bite-sized pieces.
Slice the onion and garlic, julienne the bell pepper and green bell pepper, and shred the carrot with a grater.
Add 1L water and 1 tbsp sea salt to a pan, bring to a boil, then blanch the oyster mushrooms for 15 seconds.
Add 3 tbsp cooking oil to a pan and stir-fry the garlic until lightly crispy.
Add the beef and stir-fry together, then add 6 tbsp brewed soy sauce and reduce while stir-frying.
Add 1 tbsp mirin to remove any gamey smell.
Add the carrot, bell pepper, 3 tbsp oyster sauce, 3 tbsp sugar, oyster mushrooms, and onion, then season with black pepper and salt to finish.
