Dice 3 potatoes and soak in cold water for 10 minutes. Dice half an onion, 1 green bell pepper, and the smoked ham, and slice 6 garlic cloves.
Place the potatoes in a bowl with 1 tbsp salt and let sit for 10 minutes.
Heat 2 tbsp cooking oil in a pan, stir-fry the potatoes, then add the ham and garlic and stir-fry briefly.
Add the onion and green bell pepper and stir-fry a bit more, then add 200ml water, dark soy sauce 4 tbsp, sugar 1 tbsp, and oyster sauce 0.5 tbsp, and reduce over high heat while tossing.
When the potatoes are almost done, add 3 tbsp corn syrup and turn off the heat after 30 seconds over low heat.
Drizzle with sesame oil and sprinkle sesame seeds.
